Carefully selected pomace is distilled in a bain-marie using the discontinuous steam method. This is followed by ageing in small American Oak barrels in a cosy, light-free environment. During the 18-month ageing process, the wood slowly yields its aromas to the distillate, giving it a precious roundness.
Organoleptic characteristics
A beautiful mahogany colour, very warm, it releases a broad, enveloping fragrance with great personality. It combines the notes of wood, vanilla and sultanas, which come from the slow maturation in American oak barrels, with the decisive aromas of undergrowth and raisins. The months of ageing give roundness to the taste. Rich in aromatic complexity, it is very soft on the palate with initial hints of caramel that evolve towards the taste of vin santo, with enveloping final notes. Prolonged and satisfying olfactory persistence of fruity accents.
