The secret of Collesi Gin lies in the excellence and variety of the ingredients. Pure water from Monte Nerone and various botanicals: first of all the berries of a prized juniper typical of the Apennines cultivated in the Collesi Estates and then sweet strawberries. The botanicals, skilfully dosed, are left to infuse in a full-degree grain alcohol base; the infusion is then diluted with Monte Nerone water and then refrigerated at -15° for at least 30 hours, filtered, bottled and left to mature in the dark for 4 long months.
