A careful selection of Montepulciano marc from vines in the Marche region is distilled in a bain-marie using the discontinuous steam method. This is followed by ageing in small oak barrels in a cosy, light-free environment. During the five-year ageing in the barriques where the Vino Santo was stored, the wood slowly yields its aromas to the distillate, giving it a precious roundness.
Organoleptic characteristics
A beautiful amber colour, very warm, it releases a fragrance, broad, enveloping and with great personality. It combines the notes of wood and vanilla, which come from the slow maturation in barriques, with the decisive aromas of undergrowth and ripe cherries of the grape variety of origin. The years of ageing give roundness to the taste. Rich in aromatic complexity, it is very soft on the palate with initial hints of caramel that evolve towards red fruit under spirit, with final spicy notes. Prolonged and satisfying olfactory persistence of fruity accents.
